To ensure that the spinach is completely clean, thoroughly rinse it in cold water. Spin it dry in a salad spinner, leaving just a trace of water on the leaves. or purchase a bag of triple-washed spinach

Heat the olive oil in a large pot or Dutch oven over medium heat and sauté the garlic for about 1 minute, but not until it's browned. Add all of the spinach, salt, crushed red pepper flakes and pepper to the pot, toss with the garlic and oil, and cook for 2 minutes.

Turn the heat up to high and pour in the wine. Stop cooking after stirring with a wooden spoon. Lift the spinach to a serving bowl with a slotted spoon and top with a squeeze of lemon and a sprinkle of salt. Serve immediately. Enjoy!,
