Sauteed Broccoli Rabe
Heat a large pot of salted water to a boil. Prepare a bowl of salted ice water. Place the broccoli rabe in a pot of boiling water for 1 minute. Remove from the boiling water and immediately immerse in ice water. Remove from the ice water and set aside to dry. It can be used right away or saved for later.
Using olive oil, coat a large saute pan. Bring to medium heat with the smashed garlic and crushed red pepper. Remove the garlic from the pan once it has become brown and aromatic and discard it. Toss the broccoli rabe in the oil to heat it up and season it, add the wine. Keep in mind that the broccoli is already cooked. If necessary, add more oil and season with salt. squeeze some lemon juice and serve. Enjoy!
