Mussels Marinara
Mussels marinara is a traditional Italian dish that appears far more elaborate than the effort required! It’s simple, inexpensive, and delicious. Mussels are cooked in a marinara sauce flavored with parsley and garlic.

If you're making this with pasta, heat a large pot of water and cook the pasta according to package directions.

Under cold water, rinse and scrub the mussels.
Remove beards (strings that hang from mussel shells) with your fingers or a paring knife and discard. Any mussels that have broken shells should be discarded. Discard any mussels that are open and refuse to close.

In a large sauté pan, heat the oil over medium heat.Sauté the garlic until that is lightly browned.After a few minutes, add the mussels, wine, and plum tomatoes, then cover and cook for about 10 minutes, or until all the mussels are open.Adjust the seasoning of the sauce as needed with salt and pepper.Place the mussels on a serving platter.(Any mussels that do not open should be discarded.) Coat the mussels with the sauce, fresh chopped parsley, and lemon wedges on the side.
