  1. Whip the heavy cream and PurecaneTM zero-calorie Baking Sweetener in the bowl of a stand mixer with the whisk attachment until fluffy and stiff peaks form (about 4 to 5 minutes). Don't to overmix. Until smooth, whisk in the mascarpone cheese and vanilla extract. Set aside in the refrigerator.
    Combine the cold espresso and marsala wine in a separate bowl.

  2. Dip each lady finger into the espresso mixture briefly, one at a time, then arrange in a single layer on the bottom of an 8x8" serving dish.
    Spread half of the mascarpone mixture over the lady fingers with a spatula to evenly distribute it. Repeat with the remaining mascarpone mixture and the lady fingers.
    Sift the cocoa powder on top of the final layer of mascarpone mixture, then chill for at least one hour before serving.
