Preheat the oven to 350°F. Set aside the ground beef in a large mixing bowl.
In a large pan, heat the oil. Cook until the pancetta and onions are soft and almost translucent, and the pancetta is browned. To the ground beef, combine the cooked pancetta and onions, Parmesan cheese, garlic, parsley, panko or breadcrumbs, egg, milk, salt, and pepper. -
Tip: At this point, make a small patty and fry it in a pan with a little oil to test the seasoning.
Form golf-ball-sized meatballs and place them in a pan coated with a few drops of olive oil once seasoned to your liking.
Bake the meatballs for 10 minutes in a 350-f preheated oven. Remove the meatballs from the oven, flip with tongs, and cover with marinara sauce. Bake for an additional 10 minutes. Serve warm with additional marinara and toasted baguette.
