Farfalle with Chicken & Broccoli, Grilled Chicken, fresh broccoli, and homemade roasted peppers, sauteed with garlic & olive oil over your Bowtie pasta.

  • 5 ounces Farfalle (of your favorite brand)
  • 1/4 ounces olive oil
  • 4 garlic cloves (chopped)
  • 10 ounces boneless skinless chicken breast, (cut into 1/2-inch cubes)
  • 1 cup broccoli florets
  • 1 Large roasted peppers (Cut in stripes)
  • 1/4 teaspoons crushed red pepper flakes
  • 1 pinch salt (plus salt for pasta water)
  • 1 pinch ground black pepper
  • 1/2 cups chicken broth (or vegetable)
  • 1 tablespoon Butter
  • 3 ounces grated Parmesan cheese
Cooking Directions:

    1.  Prepare pasta according to package directions; drain.

    2.  Meanwhile, in large skillet over medium heat, heat oil; add garlic. Cook 1 minute, stirring constantly; do not brown.

    Add broccoli; cook 2 minutes or until crisp-tender.

    5.  Stir in roasted peppers, red pepper flakes, salt and ground black pepper. Add broth, and butter; cook 5 minutes or until chicken is thoroughly cooked, stirring occasionally.

    6.  Toss hot pasta and chicken mixture; sprinkle with cheese.
