In a medium-sized saucepan, heat the olive oil over medium heat. Cook until the shallots or small onions and garlic are translucent, then add the chopped peeled tomatoes, salt, pepper, basil, and chili flakes. Bring to a boil, then reduce to a low heat and continue to cook for 10-15 minutes. Allow the sauce to cool to room temperature.

Preheat the oven to 375°F.
While the sauce cools, bring a large pot of lightly salted water to a boil and cook the pasta for 3 to 4 minutes less than the package directions. To stop the cooking process, drain the pasta and rinse it in cold water.
To assemble, combine the pasta, tomato sauce, half of the ricotta, and half of the mozzarella in an oven-safe casserole dish. -
Place the remaining ricotta in dollops on top of the pasta. Sprinkle with the remaining mozzarella and grated parmesan cheese Bake for 15 minutes, covered. Remove the cover and bake for another 15 minutes or until bubbly and lightly browned. Allow cool for 10 minutes before serving. Enjoy!
